Food

This week we have been reading The Ugly Vegetables. In this story, the little girl tells about her mother growing a garden of Chinese vegetables. The mother then made a soup from the vegetables that supposedly would make your belly laugh it was so good. A few of us have enjoyed different vegetables we have gotten at Mulan's or New China. It makes us wonder if these are the types of Chinese vegetables the mother grew in her garden? So here is something we would like know....

1. What vegetables do you like to eat?
2. Have you ever eaten Chinese vegetables? 
3. Do you think Chinese vegetables are really ugly or did the author exaggerate the title? 
4. Do you have any good recipes for cooking vegetable soups?


We know we are suppose to eat vegetables but...we are wondering where can we find these real Chinese vegetables? Do we just find them at the chinese restaurant or does a grocery store sell these unique vegetables?

  1. This soup is really easy and my family loves it. You not only add vegetables but the liquid part is made from vegetables too. I really love this project!

    Easy Vegetable Beef Soup
    1 pound ground beef (turkey or deer works too)
    1 46 ounce jar of V8 juice
    1 envelope onion soup mix (I use the garlic herb)
    1 package (3 oz) beef ramen noodles
    1 package (16 oz) frozen mixed vegetables (I often use fresh vegetables and cook a little longer)
    In a large saucepan, cook the meat until no longer pink. Drain. Stir in the V8 juice, soup mix, contents of the seasoning packet from the noodles, and mixed vegetables. Bring to a boil, reduce heat and simmer, uncovered, for 5 or 6 minutes until the vegetables are tender. Return to a boil and stir in the noodles. Cook for 3 minutes or till noodles are tender.
    Note:
    *You can use different types of V8 juice (like the spicy kind or low sodium—just make sure it is vegetable and not their newer fruit ones)
    *I break my noodles up a little before cooking them so they are easier to eat.
    *Canned vegetables also work

  2. I love to eat fried squash and fried okra. Those are two of my favorite vegetables and they are great side dishes. One of my favorite things to eat in the winter time is vegetable soup. My wife cooks our soup and it includes hamburger, tomatoes, potatoes, corn, carrots, and green beans. -Mr. Daniels
